Ingredients for 4 servings:
350 ml of cream
100 ml of milk
90 grams of sugar
5 egg yolks 1 vanilla pod
Bourbon
60 grams of berries, fresh or frozen
60 grams of brown sugar cane




Switch il forno a 95° centigradi. La temperatura è importantissima perchè l'acqua del bagno maria non deve assolutamente bollire, una piccola goccia d'acqua caduta nella crema, potrebbe rovinare tutto.
Tagliare la stecca di vaniglia in due, nel senso della lunghezza e metterla nel latte in un pentolino e far riscaldare a fuoco lento. Intanto, sbattere con forza i tuorli con lo zucchero fino ad ottenere una preparazione spumosa e di colore chiaro. Incorporare dunque la crema fredda e mischiare bene. Aggungere il latte in un filo e mischiare di nuovo. Disporre i frutti di bosco nelle cocottine e versarci la crema. Far cuocere a bagno maria nel forno durante circa un'ora, un'ora e un quarto. Lasciar raffreddare e poi lasciar riposare la crema in frigo durante almeno due ore.

Per la caramellizazione, cospargere le creme fredde di zucchero scuro e se si ha l'apposito cannello, caramellizzare lo zucchero servendosi di questo. Se non si ha il cannello, rimettere le cocottine in bagno maria di acqua freddissima (con qualche cubetto di ghiaccio sarbbe meglio) e passarle qualche minuto in forno in posiszione di grill, più vicino possibile alla fonte di calore, lasciando la porta del forno aperta. In questo modo, fate attenzione a che lo zucchero si caramellizzi ma che la crema non si riscaldi.

A parte, unire la panna, il latte e le uova intere e aggiungere il basilico a questa preparazione.  Unire le zucchine alla preparazione a base di panna.
Su una base infarinata, stendere la pasta sfoglia e ricavarne due dischi, uno un poco più grande della tortiera e l'altro leggermente più piccolo. Foderare la teglia già imburrata con il disco più grande, fare dei buchini con una forchetta e riempire con le zucchine, stendendole in maniera uniforme. Coprire con il secondo disco e premere sui bordi per chiudere bene. Sbattere il tuorlo d'uovo con una cucchiaiata di acque e spennellare la torta. Praticare sulla torta dei tagli regolari e infornare per 35 minuti.
